Simple yet Elegant Chicken Florentine


This is an extremely simple yet elegant dish to make for two or two hundred. It can be prepared up to a day ahead of time in the pan(s) so all you need to do is add the cream before baking. It's great for large gatherings because you don't need to watch it closely.

Arrange washed boneless skinless breasts in a baking dish in a single layer.

Sprinkle each breast with 1 T flour, 1/2 tsp chicken boullion, 1tsp parmesan or romano cheese, a pinch of mace (or nutmeg), 2 T minced celery, 1 T fresh rosemary leaves and pour enough heavy cream in to barely cover the breasts. Bake at 350 for 25 - 35 minutes jostling the breasts occasionally with a wooden spoon.

This dish goes extremely well with a wild mushroom risotto flavored with saffron topped with Parmesan or Romano cheese.

And why are you sharing recipes?

Great to read, sounds delicious, only I add a heavy pinch of cayenne pepper to give it that wonderful bite.

Even my 80ish mother enjoyed cayenne in her pasta. When I forgot to add it, which was rare, she told me the dish was limp, yes, limp....

Try adding cayenne to all your dishes. It gives it that wonderful bounce in addition to all the garlic and lemon.

Sorry about that LadyAhasuerus!

I share the recipes I've found successful and think others would enjoy making. This one is so easy, anyone can make it with no cooking experience.

I see recipes as a springboard for creativity so they don't need to be followed precisely unless we're talking about certain types of baking or candy making.

Yes, cayenne can brighten up so many dishes. I'm a huge fan of garlic and this recipe offers a contrast to the many garlic heavy dishes I enjoy but I wouldn't hesitate to add garlic, lemon, onions or peppers if the mood suited me.
